  • 1 lb Ground Beef or plant-based meat
  • 1 medium Onion or shallots/leeks
  • 1 can Black Beans or pinto beans
  • 1 can Diced Tomatoes with Green Chilies or fresh tomatoes/jalapeños
  • 2 tbsp Chili Powder or taco seasoning
  • 1 tsp Cumin
  • 1 tsp Garlic Powder or 1 clove fresh minced garlic
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
For the Cornmeal Topping
  • 1 cup Cornmeal or gluten-free cornmeal
  • 1 cup Milk or plant-based milk
  • 1 large Egg or flax egg
  • 1 cup Shredded Cheddar Cheese or any cheese
  • 1/2 cup Black Olives optional
For Garnish
  • 1 bunch Fresh Cilantro or green onions/parsley

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your baking dish for layering.
  2. In a large skillet, cook the ground beef and diced onion over medium heat for 5-7 minutes until browned.
  3. Stir in black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Simmer for 5 minutes.
  4. In a mixing bowl, combine cornmeal, milk, and egg. Mix until smooth.
  5. Grease a baking dish and layer half of the cornmeal mixture, then the beef mixture, followed by the remaining cornmeal mixture.
  6. Top with shredded cheese and black olives if desired.
  7. Bake for 30-35 minutes until golden brown. Check doneness with a toothpick.
  8. Let cool for 10 minutes before slicing. Garnish with fresh cilantro before serving.
