- In a large Dutch oven, heat vegetable oil over medium-high heat. Add ground beef, cook until browned.
- Add diced onions and bell peppers, sauté until softened and caramelized.
- Push vegetables to the side, add minced garlic and spices, toast for 1 minute.
- Return browned beef, add crushed tomatoes and kidney beans, pour in beef broth, stir well.
- Bring to a gentle simmer, then cover and simmer for 30-40 minutes.
- Taste and adjust seasoning with salt and black pepper before serving.
