Ingredients
  

Chili Base
  • 2 tbsp Vegetable Oil Substitutable with olive oil.
  • 1.5 lbs Lean Ground Beef Ground turkey can be used for a leaner option.
  • 1 Yellow Onion, diced
  • 1 Green Bell Pepper, diced Can replace with yellow or red.
  • 1 Red Bell Pepper, diced Can substitute with more green pepper.
  • 2 cloves Garlic, minced Optional.
Spices
  • 2 tbsp Chili Powder
  • 1 tbsp Ground Cumin
  • 1 tsp Smoked Paprika Regular paprika can be a substitute.
  • 1/2 tsp Dried Oregano Can be replaced with Italian seasoning.
Liquid and Beans
  • 1 can (28 oz) Crushed Tomatoes Diced tomatoes may be used.
  • 1 can (15 oz) Kidney Beans, rinsed and drained Can substitute with black beans.
  • 1 cup Beef Broth/Water Beef broth enhances flavor.
Seasoning
  • Salt Adjust to taste.
  • Black Pepper Adjust to taste.

Method
 

Cooking Steps
  1. In a large Dutch oven, heat vegetable oil over medium-high heat. Add ground beef, cook until browned.
  2. Add diced onions and bell peppers, sauté until softened and caramelized.
  3. Push vegetables to the side, add minced garlic and spices, toast for 1 minute.
  4. Return browned beef, add crushed tomatoes and kidney beans, pour in beef broth, stir well.
  5. Bring to a gentle simmer, then cover and simmer for 30-40 minutes.
  6. Taste and adjust seasoning with salt and black pepper before serving.
