- Make the Marinade by whisking together olive oil, lemon zest and juice, grated garlic, crushed red pepper flakes, rosemary, oregano, kosher salt, and black pepper in a shallow dish.
- Marinate Steak by patting dry the ribeye steaks and coating them in the marinade. Cover and refrigerate for at least 8 hours or up to 48 hours.
- Preheat Grill by cleaning the grates and heating your grill to medium-high, about 500°F, for at least 15 minutes.
- Grill Steak by placing marinated steaks on the grill, searing for 3–4 minutes, then rotating for crosshatch marks. Flip and cook for an additional 4–6 minutes.
- Rest & Slice by removing steaks to a cutting board to rest for 10-15 minutes, then slice against the grain and serve.
