- Bring a large pot of water to a boil, adding sea-salt flakes. Cook bucatini until al dente, about 9-11 minutes, reserving ½ cup of the starchy water.
- In a frying pan, melt the unsalted butter until foamy, then add reserved pasta water and bring to a boil for 1 minute.
- Season the sauce with freshly ground black pepper and stir in the grated Pecorino cheese until creamy.
- Transfer the drained bucatini to the frying pan and toss in the sauce until coated, adding more pasta water if needed.
- Plate the pasta, topping with additional grated Parmesan and chopped parsley. Serve immediately.
