For the Sauce
  • 2 tbsp Unsalted Butter Olive oil is a lighter alternative
  • 1 tbsp Freshly Ground Black Pepper Substitute with white pepper if desired
  • 1 cup Pecorino Cheese Can substitute with Parmesan
  • 1/4 cup Parmesan Optional but enhances the dish
For Garnish
  • 2 tbsp Flat-Leaf Parsley Basil can be used for variation

Method
 

Cooking Instructions
  1. Bring a large pot of water to a boil, adding sea-salt flakes. Cook bucatini until al dente, about 9-11 minutes, reserving ½ cup of the starchy water.
  2. In a frying pan, melt the unsalted butter until foamy, then add reserved pasta water and bring to a boil for 1 minute.
  3. Season the sauce with freshly ground black pepper and stir in the grated Pecorino cheese until creamy.
  4. Transfer the drained bucatini to the frying pan and toss in the sauce until coated, adding more pasta water if needed.
  5. Plate the pasta, topping with additional grated Parmesan and chopped parsley. Serve immediately.
