Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Season the chicken with salt and pepper, then sear for about 3-4 minutes per side until golden brown. Transfer to a plate and set aside.
  2. Reduce the heat to medium and add the remaining tablespoon of olive oil. Sauté the diced onion and bell pepper until softened, about 4 minutes. Stir in minced garlic and cook for 1 more minute until fragrant.
  3. Pour in the dry white wine, scraping up any brown bits from the bottom of the pot. Let the wine reduce by half, about 3 minutes. Stir in crushed tomatoes, mushrooms, Italian seasoning, and balsamic vinegar. Bring to a gentle simmer.
  4. Return the browned chicken to the pot, nestling it into the sauce. Cover partially and let it simmer for about 15-20 minutes until cooked through and sauce thickens.
  5. Taste and adjust seasonings with additional salt and pepper. Serve chicken whole or shredded, enjoying with your favorite side.
