Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef Mix with ground pork for extra moisture.
  • 1 can Diced Tomatoes with Onion and Green Pepper
  • 1 medium Green Pepper Substitute with any bell pepper.
  • 2 tbsp Worcestershire Sauce Can be omitted for milder taste.
  • 2 large Eggs Use flax eggs for vegan option.
  • 1/2 cup Milk Almond or nut milk for dairy-free.
  • 1 tsp Black Pepper Adjust to taste.
  • 1 cup Crushed Ritz Crackers Substitute with saltine crackers if desired.
For the Glaze
  • 1/2 cup Ketchup Barbecue sauce can be used instead.
  • 1 tbsp Apple Cider Vinegar White vinegar or lemon juice are substitutes.
  • 1 tbsp Brown Sugar Adjust quantities if using white sugar or honey.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine ground beef, drained diced tomatoes, Worcestershire sauce, eggs, milk, black pepper, and crushed Ritz crackers. Mix thoroughly.
  3. Transfer meat mixture to the prepared loaf pan, shaping it into a neat loaf. Bake for 30 minutes.
  4. While the meatloaf is baking, mix ketchup, apple cider vinegar, brown sugar, onion powder, and mustard for the glaze.
  5. After 30 minutes, spread the prepared glaze over the meatloaf and bake for another 30 minutes until internal temperature reaches 160°F (70°C).
  6. For air fryer method, preheat air fryer to 350°F (175°C), divide mixture into mini loaves, and air fry for 30 minutes.
  7. Let the meatloaf rest for 15 minutes before slicing. Serve with classic sides.
