Preparation
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large mixing bowl, combine ground beef, drained diced tomatoes, Worcestershire sauce, eggs, milk, black pepper, and crushed Ritz crackers. Mix thoroughly.
- Transfer meat mixture to the prepared loaf pan, shaping it into a neat loaf. Bake for 30 minutes.
- While the meatloaf is baking, mix ketchup, apple cider vinegar, brown sugar, onion powder, and mustard for the glaze.
- After 30 minutes, spread the prepared glaze over the meatloaf and bake for another 30 minutes until internal temperature reaches 160°F (70°C).
- For air fryer method, preheat air fryer to 350°F (175°C), divide mixture into mini loaves, and air fry for 30 minutes.
- Let the meatloaf rest for 15 minutes before slicing. Serve with classic sides.
