Ingredients
  

  • 2 medium zucchinis sliced into rounds
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a little olive oil.
  2. In a large bowl, combine the sliced zucchini, diced onion, diced red bell pepper, minced garlic, halved cherry tomatoes, oregano, basil, salt, and black pepper. Drizzle with olive oil and toss until well coated.
  3. Spread the vegetable mixture evenly in the prepared baking dish.
  4. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top of the vegetables.
  5. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the cheese is bubbly and golden brown.
  6. Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
