  • 1/4 teaspoon Crushed red pepper flakes Adjust according to spice preference.
  • 2 tablespoons Cornstarch Can substitute with arrowroot powder.
  • 1/2 cup Cold water For cornstarch slurry.
For the Chicken
  • 1 pound Boneless skinless chicken breasts Cut into bite-sized pieces.
For Serving
  • 2 cups Hot cooked rice Switch with quinoa or noodles for variety.
  • 1 tablespoon Sesame seeds Optional garnish.
  • 2 pieces Thinly sliced green onions Optional but highly recommended.

Step-by-Step Instructions
  1. Select the sauté setting on your 6-quart Instant Pot. Pour in about 2 tablespoons of sesame oil and let it heat for a minute.
  2. Cut the chicken into bite-sized pieces and brown in the pot for about 3-4 minutes until golden brown on all sides. Remove and set aside.
  3. Return the browned chicken to the pot. In a bowl, whisk together honey, soy sauce, water, garlic, and red pepper flakes, then pour over chicken.
  4. Secure the lid, set the valve to sealing, and cook on high pressure for 4 minutes. Perform a quick release after cooking.
  5. Mix cornstarch with cold water to create a slurry. Select the sauté setting on low, stir the slurry into the pot, and simmer until thickened.
  6. Serve the chicken over rice, garnished with sesame seeds and green onions.
