- Select the sauté setting on your 6-quart Instant Pot. Pour in about 2 tablespoons of sesame oil and let it heat for a minute.
- Cut the chicken into bite-sized pieces and brown in the pot for about 3-4 minutes until golden brown on all sides. Remove and set aside.
- Return the browned chicken to the pot. In a bowl, whisk together honey, soy sauce, water, garlic, and red pepper flakes, then pour over chicken.
- Secure the lid, set the valve to sealing, and cook on high pressure for 4 minutes. Perform a quick release after cooking.
- Mix cornstarch with cold water to create a slurry. Select the sauté setting on low, stir the slurry into the pot, and simmer until thickened.
- Serve the chicken over rice, garnished with sesame seeds and green onions.
