  • 8 oz Baby Bella Mushrooms Use white buttons or omit if necessary.
  • 2 tbsp Olive Oil Butter or vegetable oil can be alternatives.
  • 2 cloves Garlic Fresh and aromatic.
  • 2 tbsp Butter Margarine can be used as an alternative.
  • 2 tbsp All-Purpose Flour Switch to cornstarch for a gluten-free option.
  • 1/2 cup Marsala Wine Grape juice mixed with vinegar serves as a non-alcoholic substitute.
  • 1/2 cup Heavy Whipping Cream Half and half is a lighter option.
  • 1 tbsp Fresh Parsley Omit if fresh herbs aren’t on hand.

Step-by-step Instructions
  1. Preheat your oven to 350ºF (175ºC) and prepare a loaf pan by lining it with foil or spraying with nonstick spray.
  2. In a large mixing bowl, combine ground beef or chicken with Italian seasoning, garlic powder, onion powder, broth, eggs, salt, black pepper, breadcrumbs, and grated Parmesan. Mix thoroughly.
  3. Shape the meat mixture into a loaf and place it into the prepared loaf pan. Bake for 40 minutes until the internal temperature reaches 165ºF (73.9ºC) for chicken or 160ºF (71.1ºC) for beef.
  4. Heat olive oil in a skillet over medium heat and sauté sliced baby Bella mushrooms until golden brown, about 5-7 minutes.
  5. Add minced garlic to the skillet and cook until fragrant. Reduce heat, add butter, and melt. Whisk in flour to create a roux.
  6. Slowly add broth and Marsala wine, stirring continuously until the gravy is smooth and thickened. Stir in heavy whipping cream and simmer for 2-3 minutes.
  7. Allow meatloaf to rest for 5 minutes, then slice and serve topped with creamy mushroom gravy and a sprinkle of parsley.
