- Preheat your oven to 350ºF (175ºC) and prepare a loaf pan by lining it with foil or spraying with nonstick spray.
- In a large mixing bowl, combine ground beef or chicken with Italian seasoning, garlic powder, onion powder, broth, eggs, salt, black pepper, breadcrumbs, and grated Parmesan. Mix thoroughly.
- Shape the meat mixture into a loaf and place it into the prepared loaf pan. Bake for 40 minutes until the internal temperature reaches 165ºF (73.9ºC) for chicken or 160ºF (71.1ºC) for beef.
- Heat olive oil in a skillet over medium heat and sauté sliced baby Bella mushrooms until golden brown, about 5-7 minutes.
- Add minced garlic to the skillet and cook until fragrant. Reduce heat, add butter, and melt. Whisk in flour to create a roux.
- Slowly add broth and Marsala wine, stirring continuously until the gravy is smooth and thickened. Stir in heavy whipping cream and simmer for 2-3 minutes.
- Allow meatloaf to rest for 5 minutes, then slice and serve topped with creamy mushroom gravy and a sprinkle of parsley.
