- Begin by heating 2 tablespoons of olive oil in a large skillet over medium-low heat. Season the salmon fillets generously with red pepper flakes, paprika, Italian seasoning, and salt. Carefully place the seasoned salmon in the hot skillet and cook for about 5 minutes on each side until it is cooked through and has a beautiful golden crust. Once done, remove the salmon from the skillet and set it aside on a plate.
- In the same skillet, add 1 tablespoon of olive oil or butter over medium heat. Allow it to melt, then introduce the minced garlic and chopped onion. Sauté them gently, stirring occasionally for about 2-3 minutes until the onion becomes translucent and fragrant, but not browned.
- Next, add the chopped tomatoes along with fresh basil and the spinach to the skillet. Stir the mixture and cook for 3-5 minutes, allowing the spinach to wilt and the tomatoes to soften.
- Gently return the cooked salmon fillets to the skillet, nestling them in the sauce. Let them reheat briefly for about 1-2 minutes, ensuring they soak up all those delicious flavors.
