Ingredients
  

  • 2 pounds beef chuck cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1- inch piece ginger sliced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cinnamon
  • 1 star anise
  • 2 bay leaves
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving
  • Crusty bread or rice for serving

Method
 

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and sliced ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the beef cubes to the pot, browning them on all sides for about 5-7 minutes.
  4. Mix in the sliced carrots and chopped celery, followed by the tomato paste. Stir well to combine.
  5. Pour in the beef broth, soy sauce, fish sauce, brown sugar, black pepper, cinnamon, star anise, and bay leaves. Bring the mixture to a boil.
  6. Reduce the heat to low, cover, and let the stew simmer for 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add water if the stew becomes too thick.
  7. Once the beef is tender, taste and adjust seasoning with salt if needed. Remove the star anise and bay leaves before serving.
  8. Serve hot, garnished with fresh cilantro and lime wedges, alongside crusty bread or over rice.
