Push the vegetables to one side of the skillet and add the shaved steak to the other side. Season with salt and pepper.

Combine the steak with the sautéed vegetables in the skillet and mix well.
Preheat the broiler in your oven.
Slice the hoagie rolls open but not all the way through. Place a slice of provolone cheese inside each roll.
Spoon the steak and vegetable mixture evenly into each roll.
Place the filled sandwiches on a baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.
