Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can 14.5 ounces diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the drained diced tomatoes, oregano, red pepper flakes, salt, and pepper. Cook for about 5 minutes, allowing the mixture to thicken slightly.
  4. Add the shrimp to the skillet, cooking until they turn pink and opaque, about 3-4 minutes.
  5. Sprinkle the crumbled feta cheese over the shrimp mixture and let it melt slightly, about 2 minutes.
  6. Remove from heat and stir in the chopped parsley. Serve hot with lemon wedges on the side.
