  1. Sauté the Bacon: In a large skillet over medium heat, add diced bacon and sauté until crispy, about 7-10 minutes.
  2. Cook the Vegetables: Using the bacon fat left in the skillet, add diced white onion, red bell pepper, and serrano or jalapeno pepper. Sauté for 3-4 minutes.
  3. Mix the Bean Base: In a large mixing bowl, combine sautéed vegetables, drained Bush's Baked Beans, pineapple tidbits, ketchup, brown sugar, and dry ground mustard.

  5. Smoke or Bake the Beans: If smoking, preheat to 225°-250°F and smoke for 2.5 to 3 hours. If baking, preheat oven to 350°F and bake for 1 hour.
