For the Meatloaf Base
  • 1 lb Ground Beef Can be replaced with ground chicken for a lighter option.
  • 1 cup Breadcrumbs Italian-seasoned breadcrumbs add flavor.
  • 1 large Egg
  • 1 medium Onion (finely chopped) Sweet onions can be used for a milder taste.
  • 2 cloves Garlic (minced) Freshly minced is best.
  • 1/2 cup Milk Cream can enrich the meatloaf further.
  • 1 tbsp Smoked Paprika
  • 1 tsp Salt Use sea salt for a refined taste.
  • 1/2 tsp Black Pepper Freshly ground is preferred.
For the Delicious Filling
  • 8 oz Cream Cheese (softened) Can be replaced with Greek yogurt for a tangy twist.
  • 1 cup Shredded Cheddar Cheese Pepper jack can be used for additional spice.
  • 2 medium Fresh Jalapeños (diced) Remove seeds for lower heat.
For the Crispy Wrap
  • 8 slices Turkey Bacon Traditional bacon can be used.

Method
 

Preparation
  1. Preheat your oven to 375°F and line a baking sheet with parchment paper or aluminum foil.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, onion, garlic, milk, smoked paprika, salt, and black pepper. Mix until just combined.
  3. In a separate bowl, combine the softened cream cheese, shredded cheddar cheese, and diced jalapeños until smooth.
  4. Shape half of the meat mixture into a loaf on the baking sheet, creating a well in the center.
  5. Spoon the cream cheese mixture into the well of the meatloaf base.
  6. Cover with the remaining meat mixture, sealing the edges to contain the filling.
  7. Lay turkey bacon strips over the top of the meatloaf.
  8. Bake for 60 to 70 minutes until the internal temperature reaches 160°F, broiling for the last 3 to 5 minutes for extra crisp.
  9. Allow to rest for 10 minutes before slicing and serving.
