- Combine boneless chicken thighs with Delmas poultry seasoning and store-bought jerk seasoning in a bowl. Marinate for 15-20 minutes.
- In a large pot, heat oil and sear marinated chicken for 3-4 minutes on each side until golden-brown. Set aside.
- In the same pot, sauté chopped onions and green onions for 2-3 minutes until fragrant. Add tomato paste and cook for 1 minute.
- Add peas, carrots, and washed basmati rice. Pour in lemon juice and mix well.
- Return chicken to pot, pour low-sodium chicken stock over, cover, and let it simmer for 30-40 minutes.
- After cooking, fluff rice with a fork, serve warm, garnish with green onions if desired.
