Ingredients
  

For the Meatloaf
  • 2 lbs Lean Ground Beef 85% lean
  • 2 Large Eggs
  • 1 White Onion finely diced
  • 2 cups Hearty Bread stale bread works great
  • 1 cup Cheddar Cheese fresh grated
  • 2 Jalapeno medium-sized, adjust for heat
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tsp Salt
  • 1 tsp Garlic Powder
For the Glaze
  • 1 cup Ketchup sugar-free recommended
  • 1 tbsp Worcestershire Sauce optional but recommended
  • 2 tbsp Light Brown Sugar adjust to your preference
  • 1 tbsp Yellow Mustard
For Topping
  • 1 tbsp Fresh Cilantro optional garnish
  • 1 spray Olive Oil Cooking Spray for greasing loaf pan

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by spraying it with olive oil cooking spray.
  2. In a large mixing bowl, combine the lean ground beef, large eggs, finely diced white onion, grated cheddar cheese, and diced jalapeno. Add oregano, basil, garlic powder, Worcestershire sauce, breadcrumbs, and salt. Mix gently until just combined.
  3. Transfer the meat mixture into the prepared loaf pan, leveling it out and pressing down to eliminate air pockets.
  4. In a small bowl, mix together ketchup, light brown sugar, and yellow mustard until smooth.
  5. Spread the glaze over the meatloaf and bake for 1 hour and 20 minutes or until the internal temperature reaches 160°F (70°C).
  6. Let the meatloaf rest for about 10 minutes before slicing.
