- Preheat your oven to 325°F (160°C). Gather all ingredients and baking equipment.
- In a large mixing bowl, crack the eggs and add milk and heavy cream if using. Whisk until well combined.
- Gently fold in cheese, bacon, red bell pepper, and optional onions into the egg mixture.
- Add a pinch of nutmeg or paprika, and adjust salt and pepper as desired.
- Grease six ramekins with butter to prevent sticking.
- Carefully pour the egg mixture into the prepared ramekins, filling each about ¾ full.
- Place ramekins into a larger baking dish and pour hot water until halfway up the sides.
- Bake for 25–30 minutes until set in the center.
- Let ramekins cool slightly for about 5 minutes before serving.
- Invert cada ramekin onto a plate and enjoy hot or at room temperature.
