Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C). Gather all ingredients and baking equipment.
  2. In a large mixing bowl, crack the eggs and add milk and heavy cream if using. Whisk until well combined.
  3. Gently fold in cheese, bacon, red bell pepper, and optional onions into the egg mixture.
  4. Add a pinch of nutmeg or paprika, and adjust salt and pepper as desired.
  5. Grease six ramekins with butter to prevent sticking.
  6. Carefully pour the egg mixture into the prepared ramekins, filling each about ¾ full.
  7. Place ramekins into a larger baking dish and pour hot water until halfway up the sides.
  8. Bake for 25–30 minutes until set in the center.
  9. Let ramekins cool slightly for about 5 minutes before serving.
  10. Invert cada ramekin onto a plate and enjoy hot or at room temperature.
