  • 4 cups Cooked Rice Consider brown rice or quinoa for a twist.
  • 0.5 cup Fresh Cilantro Green onions can be used instead.
  • 1 cup Kimchi Serve on the side or mix in for added flavor.

Method
 

Preparation Steps
  1. Preheat your oven to 300°F (150°C). Prepare your ingredients.
  2. In a large pot, heat a couple of tablespoons of vegetable oil over medium-high heat. Season the beef chuck roast generously with kosher salt, then carefully place it in the pot. Sear the roast for about 5 minutes on each side until browned.
  3. Remove the beef and sauté diced sweet onion, minced garlic, and grated ginger in the same pot for 3-4 minutes until fragrant.
  4. Stir in the gochujang, brown sugar, soy sauce, and beef broth. Scrape any bits stuck to the pot. Let it simmer for 2-3 minutes.
  5. Return the browed chuck roast to the pot, coating it in the sauce. Bring to simmer, cover with a lid, and bake for 3-4 hours until fork-tender.
  6. Remove the pot from the oven and let the roast rest for 10 minutes. Slice the beef and serve over cooked rice, garnished with cilantro and kimchi.
