  • 2 medium sweet potatoes peeled and diced into 1-inch cubes
  • 1 pound ground beef 80/20 blend
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cottage cheese
  • 2 tablespoons hot honey or to taste
  • 2 green onions sliced (for garnish)

Method
 

  1. Preheat your oven to 425°F.
  2. Toss the diced sweet potatoes in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
  4. While the sweet potatoes are roasting, heat a large skillet over medium heat.
  5. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 7-10 minutes.
  6. Drain excess fat if necessary, then season the beef with salt and pepper.
  7. Once the sweet potatoes are done, assemble the bowls by dividing the roasted sweet potatoes and cooked beef evenly among serving bowls.
  8. Top each bowl with a generous scoop of cottage cheese and drizzle with hot honey.
  9. Garnish with sliced green onions and serve immediately.
