  • 1/2 cup Water
  • 1 can Black Beans drained
  • 1 cup Corn fresh, canned, or frozen
  • 1 can Diced Tomatoes with Green Chilis drained
For the Layers
  • 6 large Flour Tortillas or corn tortillas for gluten-free
  • 2 cups Shredded Cheddar Cheese can mix with Monterey Jack
  • 1 cup Shredded Monterey Jack Cheese
For the Finish
  • 1 cup Sour Cream plus extra for topping
  • Green Onions optional garnish
  • Cilantro optional garnish

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your baking dish by greasing it.

  2. In a skillet, cook ground beef over medium heat for 6-8 minutes. Drain fat, add taco seasoning and water. Simmer for 5 minutes.

  4. Spread a thin layer of salsa in the baking dish. Layer with tortillas, beef mixture, cheddar, and Monterey Jack. Repeat finishing with cheese on top.

  5. Cover with foil and bake for 20 minutes, then remove foil and bake for another 10 minutes until cheese is golden.
