- Preheat your oven to 350°F (175°C) and prepare a 13x9 inch baking dish.
- Combine 2 cups of all-purpose flour with 1/4 cup of granulated sugar and 1 cup of softened unsalted butter. Press into the prepared baking dish and bake for 15 minutes.
- In a separate bowl, whisk together 3 eggs, 2 cups of granulated sugar, 1/3 cup of all-purpose flour, and 1/2 teaspoon of salt until smooth.
- Gently fold 4 cups of diced fresh rhubarb into the egg mixture.
- Pour the rhubarb mixture over the warm crust and bake for 40–45 minutes until set.
- Allow the bars to cool completely in the baking dish before slicing into squares.
