Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 13x9 inch baking dish.
  2. Combine 2 cups of all-purpose flour with 1/4 cup of granulated sugar and 1 cup of softened unsalted butter. Press into the prepared baking dish and bake for 15 minutes.
  3. In a separate bowl, whisk together 3 eggs, 2 cups of granulated sugar, 1/3 cup of all-purpose flour, and 1/2 teaspoon of salt until smooth.
  4. Gently fold 4 cups of diced fresh rhubarb into the egg mixture.
  5. Pour the rhubarb mixture over the warm crust and bake for 40–45 minutes until set.
  6. Allow the bars to cool completely in the baking dish before slicing into squares.
