Step-by-Step Instructions
  1. In a large pot, heat a drizzle of olive oil over medium heat. Sauté the shallots for about 5-10 minutes until golden and fragrant. Remove and set aside.
  2. Increase heat to medium-high, brown the beef chuck pieces for about 5 minutes each side. Return all beef to the pot.
  3. Stir in the minced garlic with the beef, cook for an additional minute. Add the tomato paste and stir for 30 seconds.
  4. Combine canned crushed tomatoes, red wine vinegar, oregano, sugar, bay leaves, cinnamon stick, whole cloves, and enough water to cover the beef. Bring to a boil, then reduce to a simmer.
  5. Cover and simmer for 1 hour and 15 minutes until the beef is tender and the sauce has thickened. Adjust seasoning as necessary.
  6. Add the reserved shallots and simmer for an additional 30 minutes.
  7. Serve in bowls, paired with rice, crusty bread, or creamy mashed potatoes.
