Ingredients

  • 4 fillets Atlantic cod Can substitute with salmon, tilapia, or snapper.
For the Vegetables

  • 1 whole Red onion Can use shallots for milder flavor.
  • 2 cloves Garlic Fresh is best; pre-minced saves time.
For Seasoning
  • 3 tablespoons Olive oil Melted butter can be used instead.
  • 2 tablespoons Fresh parsley Dried parsley works but fresh is preferable.
  • 1 tablespoon Fresh dill Thyme can be used as an alternative.
  • 1 teaspoon Dried oregano Italian seasoning is a good substitute.
  • to taste Salt
  • to taste Black pepper
  • 1 knob Butter Optional for richness.

Method
 

Step-by-Step Instructions
  1. Cut four large sheets of aluminum foil, about 12 inches long.
  2. Divide the sliced red bell pepper, red onion, and half of the minced garlic among the foil sheets.
  3. Place one Atlantic cod fillet on top of the vegetable mixture on each sheet, seasoning with salt, pepper, oregano, and remaining garlic.
  4. Drizzle olive oil over the cod fillets and top with parsley, dill, and lemon slices.
  5. Fold the edges of each foil sheet to create sealed packets.
  6. Preheat your grill to medium heat or oven to 400°F (200°C).
  7. Cook the foil packets on the grill for 12-15 minutes or in the oven for 15-18 minutes.
  8. Check for doneness by inspecting the fish; it should be flaky and opaque.
  9. Carefully unwrap each foil packet and serve the fish with the vegetables.
