  • 3-4 cloves Garlic minced, fresh preferred
  • 1-2 cups Tomatoes diced or cherry tomatoes
For the Vegetables
  • 2 cups Spinach or kale for a different texture
For the Finish
  • 1/4 cup Parmesan or nutritional yeast for a dairy-free option

Method
 

Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add your choice of pasta and cook according to package directions, about 8-10 minutes, until al dente. Reserve half a cup of pasta water, drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 3-4 minced garlic cloves and sauté for 30 seconds until fragrant. Add 1 pound of shrimp, cooking for 3-5 minutes until pink and opaque.
  3. Add 2 cups of spinach and 1-2 cups of diced tomatoes to the skillet. Stir gently for 2-3 minutes until spinach wilts and tomatoes soften.
  4. Add the drained pasta to the skillet and toss everything together. Adjust consistency with reserved pasta water if needed. Season with salt and pepper.
  5. Serve in bowls and finish with grated Parmesan cheese. Enjoy immediately.
