- Bring a large pot of salted water to a rolling boil. Add your choice of pasta and cook according to package directions, about 8-10 minutes, until al dente. Reserve half a cup of pasta water, drain and set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 3-4 minced garlic cloves and sauté for 30 seconds until fragrant. Add 1 pound of shrimp, cooking for 3-5 minutes until pink and opaque.
- Add 2 cups of spinach and 1-2 cups of diced tomatoes to the skillet. Stir gently for 2-3 minutes until spinach wilts and tomatoes soften.
- Add the drained pasta to the skillet and toss everything together. Adjust consistency with reserved pasta water if needed. Season with salt and pepper.
- Serve in bowls and finish with grated Parmesan cheese. Enjoy immediately.
