  • 1 each chili peppers Jalapeños or Red Fresno
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper adjust to taste
For the Garnish
  • 1 cup cilantro fresh, chopped
  • 1/2 cup toasted coconut flakes
  • 1 tablespoon extra lime zest for garnishing

Method
 

Preparation
  1. In a mixing bowl, combine fresh shrimp with coconut milk, lime juice, and lime zest. Add chopped chili peppers, sprinkle with salt, and stir until well-coated. Cover and marinate for 15 minutes.
  2. Preheat the grill to medium-high heat (around 400°F). Soak wooden skewers in water for 10 minutes if using. Oil grill grates to prevent sticking.
  3. Thread marinated shrimp onto skewers, spacing evenly for heat circulation. Aim for 5-6 shrimp per skewer.
  4. Grill the skewered shrimp for 2-3 minutes on each side until they turn coral and develop grill marks.
  5. Remove shrimp from the grill and plate. Garnish with cilantro, lime zest, and toasted coconut flakes before serving.
