Preparation Steps
- Wash and chop the romaine, cucumbers, tomatoes, red onion, and parsley. Set aside in a large bowl.
- Pat cucumbers and tomatoes with salt and let drain in a colander for 10-15 minutes.
- Whisk together olive oil, red wine vinegar, lemon juice, garlic, and oregano in a bowl.
- In the large bowl, combine the drained cucumbers, tomatoes, chickpeas, olives, and parsley. Toss gently.
- Just before serving, add romaine lettuce and feta, tossing gently to combine.
