Step-by-Step Instructions
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Wash and dry the Russet potatoes thoroughly. Poke several holes around each potato to allow steam to escape. Rub each potato with olive oil and sprinkle with salt, then bake on a baking sheet for 45–60 minutes until fork-tender.
  3. Once baked, slice the potatoes in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin layer against the skin.
  4. To the scooped potato flesh, add sour cream, butter, both types of cheese, garlic powder, onion powder, salt, and black pepper. Mix until creamy, adding milk as needed for consistency.
  5. Fill the potato skins with the creamy filling, mounding generously. Sprinkle reserved cheddar cheese over the tops.
  6. Return the potatoes to the oven and bake for an additional 15 minutes or until the cheese is melted and bubbly.
  7. Once out of the oven, top with crispy bacon and scallions before serving.
