Ingredients
  

  • 8 ounces feta cheese crumbled
  • 4 ounces cream cheese softened
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • 1 cup strawberries hulled and halved
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves optional
  • Salt and pepper to taste
  • Crackers or toasted bread for serving

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the halved strawberries with balsamic vinegar, a pinch of salt, and a dash of pepper. Spread them out on the prepared baking sheet.
  3. Roast the strawberries in the oven for about 15-20 minutes, or until they are soft and caramelized. Remove from the oven and let cool slightly.
  4. In a food processor, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, honey, and a pinch of salt and pepper. Blend until smooth and creamy.
  5. Transfer the whipped feta to a serving dish and top with the roasted strawberries. If desired, sprinkle fresh thyme leaves over the top for added flavor.
  6. Serve with crackers or toasted bread for dipping.
