Method
 

Preparation
  1. Preheat your oven to 200°C fan-forced (220°C conventional). Season the beef fillet with salt and pepper.
  2. In a large frying pan, heat olive oil and sear the beef fillet for 3-4 minutes on each side.
  3. Transfer the seared beef to a roasting pan and roast for 35-40 minutes until the internal temperature reaches 60°C.
  4. Prepare vegetables by washing and cutting them into wedges. Toss with garlic, thyme, and olive oil.
  5. Combine cranberry sauce and lime juice in a saucepan, heat until smooth, baste beef with it in the last 10 minutes.
  6. Mix gravy, port, barbecue sauce, and mixed spice in another saucepan, cook until slightly thickened.
  7. Once cooked, let beef rest for 10 minutes, combine roasted vegetables with spinach, serve alongside beef with gravy.

Notes

Allow the beef to sit out for about 30 minutes before cooking for even doneness. Use a thermometer to check for perfect medium-rare at 60°C.
